Afternoon Tea Sandwiches - Three Vegetarian Fillers

Sandwich Inspiration! These three delicious, colourful, tasty options are all completely vegetarian (two are vegan) and they’re made with gluten free bread.

These sandwich fillings are great for afternoon tea, to take on a picnic or for a healthy packed lunch option that can be made the night before to save time! Which filling will you choose?

Avocado, Tomato & Coriander

Ingredients

Ripe Avocado
1Tomato
½Lime (Juiced)
3gFresh Coriander
¼ tspChilli Flakes
Salt & Pepper
2Slices of Your Chosen Bread

Method

  • Cut the avocado in half, then scoop out half the soft inside and place into a bowl. Add the juice of 1/2 lime, chilli flakes, salt and pepper and mash together.
  • Spread the avocado onto one slice of bread, then top with tomato slices and chopped fresh coriander.
  • Sandwich with another slice of bread and enjoy.

Hummus Salad

Ingredients

1 tbsp
Hummus (Heaped tbsp)
½Carrot (Grated)
½Cooked Beetroot

Salt & Pepper
2Slices of Your Chosen Bread

Method

  • Spread the hummus on both slices of bread.
  • Add the grated carrot, sliced beetroot and cress on top of one of the slices of bread. Sprinkle with salt and pepper.
  • Sandwich together with the other slice of bread.

Smokey Egg & Spinach

Ingredients

Hard Boiled Egg
1 tbsp
Hummus or Mayonnaise
½ tsp
Smoked Paprika
Small Handful Spinach

Salt & Pepper
2Slices of Your Chosen Bread

Method

  • De-shell the hard boiled egg and add to a bowl with the hummus / mayonnaise and mash together.
  • Add the smoked paprika, salt and pepper and mix together well.
  • Spread the egg mixture onto one slice of bread, then top with spinach.
  • Sandwich together with the other slice of bread.
